Ingredients

  • 1 tablespoon Sesame oil
  • 5 oz container Shiitake Mushrooms Sliced
  • 1 lb Ground Pork
  • 1 medium-sized Onion finely diced (about 1 cup)
  • ½ lb Green Beans ends trimmed and chopped into ½-inch pieces (about 1.5 cups)
  • 1 teaspoon Ginger Paste (or finely minced regular ginger)
  • 2 tablespoon Hoisin Sauce
  • 1 tablespoon Peanut Butter
  • 2 tablespoon Soy Sauce
  • Kosher Salt & pepper to taste
  • Crispy Chili Oil optional for spice

Instructions

  • Add sesame oil to a large heavy-bottomed pot over medium-high heat. Add mushrooms and a hefty pinch of salt. Cook for a few minutes until the mushrooms start to soften.
  • Scoot mushrooms to the side and add ground pork and another pinch of salt. Use a meat masher or wooden spoon to break up the pork as it cooks.
  • Once almost cooked through, add the finely chopped green beans, onions, garlic, and ginger. Stir and cook until the pork is fully cooked and the green beans are starting to soften.
  • Make a little space in the middle of the pan and add hoisin, peanut butter, and soy sauce. Mash together, then stir everything so it’s coated. Cook for a few more minutes until the green beans are crisp yet tender and bright green.
  • Remove from heat and top with crispy chili oil or red pepper flakes if desired. Serve with rice or with lettuce wraps.

Notes

And if you’re into meal prep, this is a great recipe to double. Just store leftovers in an airtight container in the fridge for 4-5 days.
