Add 2 tablespoon of olive oil to a small frying pan over medium heat.
Add the chopped onions and jalapeños and let this mixture cook down, stirring often, for a few minutes until the pieces start to turn golden brown and reduce in size.
Meanwhile, whip the feta. Break up your feta by hand and add it to a food processor or blender with a ¼ cup of olive oil. Blend the feta up, stirring or scraping the sides every minute or so to create the creamiest texture.
Once the feta is smooth, add it to a large bowl and then add in the cooked jalapeno peppers and onions.
Stir everything together until combined. (If you want it spicier, you can add in some of the jalapeno seeds.)
If you're not eating it right away, store it in an airtight container in the fridge and let it come back to room temperature before serving to make sure it’s creamy and dippable.
