Butter Board Grilled Corn Recipe
This Butter Board Grilled Corn is the ultimate summertime side dish. It’s sweet, smoky grilled corn cobs rolled in three melty, flavor-packed butter boards: Pesto Parm, Blueberry Honey Mint, and Spicy Harissa Honey—aka the dream team of salty, sweet, herby, and spicy.

Ingredients
FOR THE CORN COBS
- 8 ears Corn prepared and cleaned
- Melted Butter for brushing
- Kosher Salt to taste
FOR THE BUTTER BOARD BASE
- 1 lb Salted Butter room temp
PESTO PARM BUTTER
- 2 tablespoon Pesto
- 1 tablespoon Parmesan Cheese grated
BLUEBERRY HONEY MINT BUTTER
- 2 tablespoon Blueberry Jam
- ½ teaspoon Lemon Zest
SPICY HARISSA HONEY BUTTER
- 2 tablespoon Harissa Paste
- 1 tablespoon Honey
Instructions
- On a marble cutting board, add your room temp butter and spread it out over the entire surface.
- MAKE THE PESTO PARM BUTTER: On ⅓ of the butter board, Smear on 2 tablespoons pesto and top with 1 tablespoon grated parmesan cheese.
- MAKE THE BLUEBERRY HONEY MINT BUTTER: On ⅓ of the butter board, Smear on 2 tablespoons blueberry jam and top with ½ teaspoon lemon zest.
- MAKE THE SPICY HARISSA HONEY BUTTER: On ⅓ of the butter board, Smear on 2 tablespoons harissa paste and drizzle with 1 tablespoon honey. Place butter board aside in a cool spot in the kitchen.
- Grill the Corn: Heat grill to medium-high. Brush corn cobs with melted butter and sprinkle with kosher salt. Grill for 8–10 minutes, turning every couple minutes, until nicely charred and golden.
- Plate the grilled corn next to the butter board and let your guests roll their corn cobs in their desired butter flavors.
