Trader Joe's Cuoricini Ravioli With Pink Goat Cheese Beet Sauce

Trader Joe's Cuoricini Ravioli pairs wonderfully with this easy beet and goat cheese sauce. It’s an easy dinner recipe that’s perfect for Valentine’s Day.

Ingredients
  

  • 1 6 oz jar Pickled Beets
  • 1 4 oz log Goat Cheese
  • 2 tablespoon Olive Oil
  • 3 cloves Garlic finely sliced
  • 1 pinch Red Pepper Flakes
  • 2 packs Trader Joe’s Ricotta Cuoricini Ravioli (or another ravioli of your choice)
  • 2 tablespoon Salted Butter
  • ½ cup Parmigiano grated
  • 3 tablespoon Fresh Basil julienned

Instructions
 

  • Get a large pot of water boiling for the ravioli. Meanwhile, add goat cheese, beets and their juice to a small blender and puree until smooth and creamy then set aside.
  • Heat a large pan over medium and add olive oil, garlic and red pepper flakes;, cook down for 2-3 minutes or until garlic starts to soften.
  • Add beet goat cheese puree to then pan and cook, stirring often, for a few minutes so that it reduces slightly.
  • While it’s cooking, add your ravioli to the boiling water and cook for a few minutes or until they begin to float.
  • Once they’re finished, strain and add them to the beet goat cheese sauce along with butter and parmigiano. Toss gently until everything is coated.
  • Taste and season with salt and pepper if needed before finishing with a sprinkle of fresh basil.
