The recipe for this Honey Butter Chicken Biscuit Sandwich is inspired by one of my favorite breakfast dishes from Whataburger and Pies n Thighs. For a shortcut, I am using Aldi’s Red Bag Chicken in the Air Fryer
Grate 1 stick of butter and add it to the dry ingredients. Then mix with your hands until it feels like sand.
Slowly stir in buttermilk with a fork or whisk, a little at a time.
Use your hands to knead the dough together - just be careful not overwork it so the butter doesn’t melt. It should be kind of loose and shaggy.
Pour your dough onto a floured surface and add another 1-2 tablespoon of buttermilk if it isn't coming together Use your hands to quickly pack it into shape into a long oval. Add 2 more tablespoon grated butter on top and fold both sides of the dough inwards to create 3 layers.
Use a flour dusted rolling pin to flatten it out so you have enough room to use your biscuit cutter.
Swiftly cut the biscuits (6-7 biscuits) and place them in a buttered cast iron skillet.
Cut up the remaining 2 tablespoon of butter and cover the top of the biscuits.
Bake for 15-20 minutes or until golden brown.
Remove from the oven and add 2 tablespoon of the honey butter evenly across the biscuits so it melts into them.
FOR THE HONEY BUTTER
Add room temp salted butter and honey to a small bowl and stir until combined.
FOR THE SANDWICH
While the biscuits are baking, add the frozen red bag chicken breast (1 breast per sandwich you plan on making) to your air fryer basket. Air fry the chicken breast at 400F for 10-12 minutes. Remove it from the basket.
Once the biscuits are done, split them in half and add a tablespoon of honey butter followed by the fried chicken breast and a drizzle of hot honey (or regular honey if you don't like it spicy)
Add the remaining half of the biscuit back on top to close the sandwich up.
Serve immediately with more honey butter for dunking.

Notes
Although the biscuit recipe makes 6-7 biscuits but feel free to airfry as many (as long as it's under 7!) pieces of chicken you need. You can always use the extra biscuits and honey butter for something else.
