Southern Candied Yams with Crunchy Ritz Cracker Topping

These Southern Candied Yams are topped with a crispy, crunchy ritz cracker topping. It’s the perfect recipe for those who don’t like marshmallow topped sweet potatoes.

Ingredients
  

For the Yams

  • 2 29 oz cans Yams in syrup drained (or canned sweet potatoes)
  • ½ cup Evaporated Milk
  • 2 large Eggs
  • ½ cup Sugar in the Raw
  • ½ stick Salted Butter melted
  • ½ teaspoon Cinnamon
  • 1 teaspoon Vanilla Extract

For the Topping

  • 1.5 cups Ritz Crackers crushed
  • ¾ stick Salted Butter melted
  • ½ cup Brown Sugar

Instructions
 

  • Pour the yams or sweet potatoes into a bowl and mash them well. Add remaining ingredients and mix until smooth. Place in a greased baking dish.
  • Now add the ritz crackers, brown sugar and butter to a separate bowl and mix until combined.
  • Pour the ritz mixture on top of the sweet potatoes and bake at 400 for 30-35 minutes.
