Baked Hummus Pasta

This hummus pasta recipe is made with feta cheese, olive oil and tomatoes. It’s inspired by the tiktok feta pasta recipe but with more protein and more vegetables.

Ingredients
  

  • 2 10 oz containers Cherry Tomatoes
  • 2 tablespoon Olive oil
  • 1 8 oz block Athenos Feta
  • 1 8 oz container Athenos Hummus
  • 4 cloves Garlic
  • 1 pinch Red Pepper Flakes
  • ½ lb Pasta whatever shape you prefer
  • 2 tablespoon Fresh Basil hand torn

Instructions
 

  • Preheat oven to 400F degrees.
  • Toss tomatoes with olive oil and a hefty pinch of salt in a 13x13” baking dish.
  • Make a little space in the middle of the tomatoes for the hummus. Then place the feta on top of the hummus and press it down. Add garlic cloves to the top of the hummus.
  • Drizzle everything with 1 tablespoon of olive oil and a pinch of red pepper flakes.
  • Bake for 1 hour.
  • At the 30 minute mark, get your salted pasta water boiling. Prepare the pasta al dente and be sure to reserve ½ cup pasta water for later.
  • Once the tomato mixture is done, remove it from the oven and immediately stir it up until smooth and creamy - making sure to crush any whole garlic cloves and tomatoes.
  • Pour in the cooked pasta and toss everything together. If it’s dry, stir in ¼ cup pasta water to loosen it up. If it’s still too dry, stir in the remaining ¼ cup pasta water or if it looks good, discard it.
  • Finish with a sprinkle of basil before serving.
