First Watch’s Elevated Egg Sandwich is one of my favorite breakfast sandwiches of all time. It’s so easy to make and especially tasty if you add candied bacon (or a side of their million dollar bacon!) instead of regular bacon.
Melt 1 tablespoon of salty butter in a fry pan over medium heat and toast the brioche bun until golden brown.
Add another tablespoon of salty butter then crack the egg and cook over medium. Once flipped, add the cheese and put the lid on until the cheese has melted and the egg is cooked to your liking. Remove from heat and set aside.
Next, add mayo to the bottom half of the toasted bun then add your bacon, the cheesy cooked egg, the arugula with a squeeze of lemon on top.
Mash the avocado onto the top slice of bread then sprinkle with flaky salt. Close the sandwich up and enjoy.
