One-Pan Smashed Brussels Sprouts

This smashed brussel sprouts recipe is straight up perfection and doesn’t require any parboiling or steaming. It’s a one-pot side dish that’s much less complicated than the others! In this easy recipe, crispy bacon and salty parmesan cheese are baked right on top to create a crunchy crust that’s completely divine. Vegan recipe is also included in the notes!

Ingredients
  

  • 1 lb brussel sprouts washed and trimmed
  • 2 tablespoon olive oil
  • teaspoon salt
  • ½ cup parmesan grated
  • 3 slices bacon finely diced

Instructions
 

  • Preheat oven to 400F degrees.
  • Clean brussel sprouts and trim any browned leaves. Place whole brussel sprouts in an oven-safe pan or baking sheet and toss with olive oil and salt.
  • Place in the oven and roast for 20 minutes, shaking the pan halfway through.
  • After 20 mintutes, remove the pan from the oven and place on a solid surface. Using the bottom of a clean can or coffee mug, smash the brussel sprouts until they are all crushed and flattened.
  • Sprinkle with cheese and top with diced bacon. Place in the oven for 25 more minutes or until bacon and parmesan is crispy and crusty.
  • Remove from the oven and enjoy.

Notes

If you’d like to make them vegan, just skip the parmesan and bacon, toss once more and cook for an additional 15-20 minutes. When they're done, finish with lemon juice and fresh pepper for more flavor!
