Instructions

For the Cinnamon Buns

  • In a small bowl, mix together white sugar and cinnamon and set aside.
  • Add one sheet of puff pastry to a clean, floured surface.
  • Thoroughly smear the sheet with 1 tablespoon of salted butter, end to end, corner to corner.
  • Sprinkle on 2 tablespoon of brown sugar and then sprinkle on 2 tablespoon of the cinnamon sugar.
  • Tightly roll the dough until a log is formed and set aside.
  • Repeat the process for the remaining sheet of puff pastry.
  • Whip one egg white in a small bowl then brush the outside of each log with it.
  • Roll the cinnamon bun logs in the raw sugar until the entire outside of the log is coated in the sugar crystals.
  • Cut each log into 6 pieces and set each piece swirl side up on a lined baking sheet. Sprinkle the top with the residual sugar crystals.
  • Bake for 30 minutes or until golden brown. Let cool for 5-10 minutes then place on a serving dish and drizzle with vanilla glaze

For the Vanilla Glaze

  • While the cinnamon buns are baking, whisk together powdered sugar and heavy cream. Then stir in vanilla and about two pinches of salt (about ¼ teaspoon salt).
