In a small bowl, mix together white sugar and cinnamon and set aside.
Add one sheet of puff pastry to a clean, floured surface.
Thoroughly smear the sheet with 1 tbsp of salted butter, end to end, corner to corner.
Sprinkle on 2 tbsp of brown sugar and then sprinkle on 2 tbsp of the cinnamon sugar.
Tightly roll the dough until a log is formed and set aside.
Repeat the process for the remaining sheet of puff pastry.
Whip one egg white in a small bowl then brush the outside of each log with it.
Roll the cinnamon bun logs in the raw sugar until the entire outside of the log is coated in the sugar crystals.
Cut each log into 6 pieces and set each piece swirl side up on a lined baking sheet. Sprinkle the top with the residual sugar crystals.
Bake for 30 minutes or until golden brown. Let cool for 5-10 minutes then place on a serving dish and drizzle with vanilla glaze
