This savory, spicy, and creamy avocado breakfast grilled cheese is packed full of everything you need to start your day -- Melty cheese, avocado, sriracha and soft boiled eggs griddled between two slices of multigrain bread.
1 cup of Casa Bolo Melange cheeseor gouda or muenster
½ ripe avocadosliced
1 soft boiled egg(boiled for 8 minutes)
½ tbs of sriracha
2 pats of salty butter
Instructions
1. Begin by assembling the sandwich. Place half of the cheese on to one slice of toast followed by the half of the cheese, the avocado, the egg, and the sriracha. Top with the remaining cheese and the top piece of bread.
Butter the outside of the sandwich and place it in a cast iron skillet or panini press over medium-high heat. Cook until both sides are golden and crispy and the cheese has melted. Remove from heat and serve immediately.
