Extra Cheesy Corned Beef Reuben Grilled Cheese

These extra cheesy corned beef reuben grilled cheese are the perfect way to use up leftovers from St Patricks Day! They're cheesy, meaty, saucy and super crispy! They're basically all that is good in the world! Let's make 'em!

Ingredients
  

FOR THE SAUCE

  • 3 tablespoon Mayo
  • 1 tablespoon Ketchup
  • 2 tablespoon Relish or sweet pickle relish
  • ½ tso Chipotles in adobo finely chopped
  • 1 squeeze Lemon Juice
  • ¼ teaspoon Paprika
  • Kosher Salt and Pepper to taste

FOR THE SAUCE

  • 2 thick slices Marbled Rye Bread
  • 4 slices Swiss Cheese
  • ¼ lb Leftover Guinness Corned Beef from my blog
  • 2 tablespoon Sauerkraut strained to remove excess liquid
  • 2 tablespoon Sauce from Above served with more for dipping
  • 2 pats Salted Irish Butter

Instructions
 

  • Begin by mixing all of the sauce ingredients together and set aside.
  • Smear one slice of bread with sauce, add half the cheese, the corned beef, the kraut, the rest of the cheese. Smear sauce on the other slice of the bread and close the sandwich.
  • Add half the butter to the pan over medium heat and add sandwich. Smear it around and cook on both sides until then bread is golden and the cheese has melted.
  • Remove from heat and serve with remaining sauce.

You could also swap it for store-bought 1000 island if you prefer.
