Knockoff EggSlut Sandwich

This knockoff EggSlut Sandwich is so incredibly delicious! Inspired by their iconic Fairfax breakfast sandwich, it's loaded with cheesy soft scrambled scallion eggs, sriracha mayo, crispy bacon and a buttery toasted brioche bun. It's the perfect sandwich for hangovers, brunches, or mornings when you need a little something extra to start your day.

  • ½ cup mayo
  • 2 tsp sriracha
  • 1 tsp smoked paprika optional but i recommend!
  • 2 tbsp salted butter divided
  • 5 large eggs
  • 1 tsp franks hot sauce
  • 1 tbsp scallions finely diced
  • 4 slices cheddar cheese I actually prefer american cheese which is pictured!
  • 4 pieces bacon cooked
  • 2 brioche buns
  • kosher salt


  • Mix mayo, sriracha and smoked paprika together in a small bowl and set aside.
  • In another bowl, thoroughly whisk together eggs, franks hot sauce, and a pinch of salt. Set aside.
  • In a nonstick pan over medium low heat, melt 1 tbsp of butter and pour in the eggs.
  • Slowly stir the eggs until curds begin to form. Then add two pieces of cheese and the scallions and keep stirring. The eggs are done when they're slightly set and firm yet wet, glossy, and fluffy looking.
  • Separate the cooked eggs into two piles and top each one with a slice of American cheese.
  • Wipe out the pan and add the remaining butter, toast the insides of the brioche buns until they’re golden brown.
  • Assemble sandwiches. Smear 1 tbsp of mayo onto each of the bottom of the buns, then top evenly with the cheesy scrambled eggs and the bacon. Smear more mayo onto the top half of the bun and then close the sandwich up. Serve immediately and enjoy!
