Ingredients

  • 1 8 oz wheel brie
  • 1 sheet puff pastry thawed
  • 3 tablespoon fig jam
  • 4 dried figs optional
  • 1 egg white whisked
  • 1 sprig fresh rosemary
  • kosher salt

Instructions

  • Preheat your oven to 400F degrees.
  • Place egg white in a small bowl and whisk until its thoroughly beaten.
  • Line a baking sheet with parchment paper.
  • Lay thawed puff pastry on the baking sheet and place the brie in the center.
  • Add fig jam to the brie and then top with sliced dried figs.
  • Carefully pull the 4 edges of the puff pastry to the center and seal with a little bit of egg white. Then pull the rest of the pastry that’s sticking out to the center and seal with more egg white.
  • Brush the exterior of the puff pastry with egg white was then add a few rosemary sprigs on top.
  • Bake for 20-25 minutes until the puff pastry is golden.
  • Remove from the oven and let rest for 5 minutes before cutting in.

Notes

If you don't have parchment paper, that's ok -- you still don't need to grease a baking sheet -- The puff pastry has plenty of butter/oil so it won't stick.
