Pork Roll Egg and Cheese Bagel Grilled Cheese

THIS pork roll egg and cheese grilled cheese is the bomb! It features everything that is beautiful in the world: farm fresh eggs, artisanal cheese, trendy NYC bagels, locally made hot sauce, and responsibly made breakfast meat. Basically this is a grilled cheese in a metaphorical leather jacket.

Ingredients
  

  • 1 bagel
  • ½ cup cheese I used Kinsman Ridge Cheese by Jasper Hill
  • 1 tablespoon hot sauce I used A&B American Style Pepper Sauce
  • 2 over easy eggs
  • 3 slices pork roll
  • 1 pat salted butter

Instructions
 

  • Begin by adding four cuts to the exterior of the pork roll - this will help it crisp up evenly.
  • Add the slices to a pan over medium heat. Cook on both sides until crispy. Remove and set aside — leaving the grease in the pan.
  • Next, cut the bagel in half and flip it inside out so the interior is now the exterior.
  • Lay half of the cheese on top then add the cooked pork roll and the rest of the cheese.
  • Close the sandwich and lightly the outside.
  • Now put the sandwich in the greased pan and cook on medium for a few minutes on both sides until the cheese has melted and the bagel is crispy.
  • Once it’s done, remove from heat and add the eggs and however much hot sauce you’d like.
  • Serve immediately.
