King Noodle's Kimchi Carbonara with Doritos

This Dorito Kimchi Carbonara recipe is inspired by one of my favorite dishes from King Noodle in Brooklyn. It’s a fun Asian Italian fusion dish that’s out of control and delicious.

Ingredients
  

  • ½ lb Bucatini Pasta
  • 6 slices Thick Cut Bacon roughly chopped
  • ½ cup Kimchi roughly chopped
  • 1 large Egg room temp
  • 3 large Egg Yolks room temp
  • ½ cup Pecorino grated
  • ½ cup Cheese Doritos Crushed

Instructions
 

  • Prepare salted water and boil noodles. Before straining, make sure to reserve about 1 cup of pasta water for later on.
  • Add bacon to a heavy bottomed pan and fry until almost crispy — adding kimchi at the last minute to simply heat it up and infuse the bacon fat with the kimchi. Turn the heat off but leave on the burner.
  • Meanwhile, mix egg, egg yolks, and pecorino in a small dish and set aside.
  • Once the noodles are al dente, add them to the bacon kimchi mixture and toss.
  • Slowly add in the egg and cheese mixture, stirring consistently so the eggs don’t scramble.
  • If the sauce is looking dry, add in ¼ cup of pasta water and stir. If still dry, repeat this process until the sauce is smooth and glossy.
  • Once plated, add a handful of crushed Doritos, flaky salt and fresh cracked pepper.
