Cottage Cheese Queso Dip with Hatch Green Chilis

This quick cottage cheese queso dip is made with hatch chilis, american cheese and hot sauce. It’s a protein packed version of the popular Mexican cheese sauce that’s totally delicious and comes together in under 5 minutes.

  • Blend cottage cheese with an immersion blender or food processor until smooth and creamy.
  • Add cottage cheese, american cheese, hatch chilis, and hot sauce to a microwave safe bowl and stir.
  • Place bowl in the microwave for 30 seconds at time, stirring between each session so that the cottage cheese doesn’t separate. It should take 2.5 minutes for everything to melt and warm up. Serve immediately.

Notes

The lower/no fat tubs of cottage cheese are more likely to separate when heated so be sure to microwave at 30 second increments and stir completely between each round. I found that it’s more likely to separate if you microwave for longer than 3 minutes.
