Banana Foster Grilled Cheese with cream cheese and mascarpone

GUYS! I don’t know if I told you yet, but I’m going to be Wisconsin Cheese’s spokesperson for National Grilled Cheese Month (omggg!!!!) and to hype up the buzz, I made 5 new awesome sandwiches that are featured on their site! Here’s the first one of the mix – it’s a banana foster grilled cheese!

Blueberry Baby – Mascarpone, Brie, Basil and Blistered Blueberries Bagel Grilled Cheese

OMG, OMG! Today is National Grilled Cheese Day! Aren’t you so very, very excited? So much so that you kind of might pee your pants a little? No? That’s just me? Ok, that makes sense. Anyways! I’ve been waiting all year month for this very special day which sort of feels like Christmas to me and I’m the happiest kid around. All month, endless amounts of meltable cheese, freshly baked bread, and tricked out stay-cold coolers have been waiting for me at my front door each day in order to make this day the best it can be. Unfortunately, it’s rainy, cold, completely disgusting, and no one’s home but that’s OK. I’ll get through National Grilled Cheese Day with the power of my internet friends. RIGHT GUYS?! I just wish you all could come over and cook with me and help me eat all the food that’s been sent my way.


But I don’t mean to brag about all my cheesy goodness without giving you guys something in return! Yeah, sure here’s a tasty new recipe, but I also wanted to let you know that my favorite babes from Wisconsin Cheese and I have paired up to do a super awesome National Grilled Cheese Day GIVEAWAY…today! In the meantime, here’s a tasty new little grilled cheese that I thought is perfect for a sweet day like today – creamy brie, luscious mascarpone, sweet and tart blistered blueberries, and fresh earthy basil come together between a crispy buttery bagel. I think it’s the perfect way to start a grilled cheese day.

Get you some of thisssss

Ingredients

-1 cinnamon sugar bagel, cut in half and scooped out
– 1 small wedge of Wisconsin Brie
– 2 tbsp of BelGioioso Mascarpone Cheese
– 2 tbsp of blistered blueberries (recipe below)
– a few basil leaves, torn
– 2 pats of salted butter

So this is the most important part. It’s totally hard to eat a bagel grilled cheese without taking the necessary steps to ultimate perfection. First, cut your bagel in half and scoop out the interior of both sides. This will create the perfect little nook to keep your fillings inside the sandwich. Then, with a very sharp serrated knife, very carefully cut off the outside off the bagel so that the nice bready interior can be used to create a super crispy crust on your sandwich at the end.

Next, fill the nook of one half of your bagel with brie. Try to keep it all in the grilled cheese canyon or mote as I like to think of it. After all, it is guarding your face from getting burnt by molten cheese.
Then, lay your blistered blueberries on top of the Brie.
To make these sweet and tart treats, all you need to do is melt a pat of salted butter in your skillet and add a cup of blueberries. Turn your heat to high and let them cook up. Add a tablespoon of brown sugar once you start to see them pop and stir until evenly coated. Allow to cook for a few more minutes until the juices release and start to thicken.
And if you don’t want to go through all that, you could totally just use some sort of blueberry preserves. Those will work perfectly, they just won’t be as much fun as making them yourself!

Next, lay some torn basil leaves on top of your blueberries. I think this earthy herbal contrast is so nice against the creamy brie and the bright blueberries. Fresh mint would also be super dope.

Almost done! Just smear on some of that sweet mascarpone into the other bagel half’s canal and really pack it in there. It’s so good. If you’ve never had it before, it’s like sweet cream cheese mixed with ricotta mixed with whatever kisses the hottest person in the world gives. Yeah, it’s like that.

Combine the two halves together and awe in their glory.

Now that this insane sandwich is built, turn your burner to medium high and butter both sides of your soon-to-be grilled cheese. Place it in your skillet and allow to cook for a few minutes until the bagel turns golden and crispy. Flip and repeat. Remember, both of these cheeses melt super
fast so they don’t need to be on the burner for long. Just a few minutes will do.

Then once it’s all done, you will definitely want to let this little baby sit for a minute or two. Those cheeses need to thicken up and soak in all the flavors from the blueberries and the basil. Or if you can’t wait, who cares, you’ll just have to lick your plate to make sure nothing goes to waste.

La La Love You – French Toast Grilled Cheese with Mascarpone, Nutella and Fresh Strawberries

Is it weird that Valentines Day is one of my #1 favorite holidays? Especially considering the fact that I can’t actually remember the last time I’ve had a boyfriend during this emo-as-hell day?  Maybe it’s just that I le love the idea of love (and that i want my life to be a magnetic fields song).

But this also might stem from my preconceived ideas about living in New York.  When I moved up here I had this really romantic idea that I’d find a super cute boyfriend who listened to good music, had a nice pup pup, and a sweet smile.  Whenever we’d walk around, Jens Lekman and Todd Rundgren would be playing in the background and we’d drink bottles of wine all day in Central Park and laugh until our teeth fell out. BUT NOPE – not so much.  Though for some reason or another (maybe it’s just the Stevie Nicks in me) it’s really easy for me to forget about all the d-bags I’ve dated  (ok, so i guess there are a few nice ones mixed in there… somewhere) and be semi-optimistic about the future. semi.

But enough about me, let’s talk about this super sweet and kindhearted breakfast-in-bed grilled cheese that won’t stand you up on a Friday night I’m making for you and your lovie.


And now here are the sweet ingredients:

– 3 heart shaped pieces of challah bread (I used a giant cookie cutter)
– your favorite french toast batter (I used 2 eggs, 1/2 cup of milk, 1/4 tsp vanilla, and 1/4 tsp cinnamon)
– 3 large sliced organic strawberries
– 2 pads of salted butter
– 2 tbs of Mascarpone Cheese
– 2 tbs of Nutella (ZOMG, right?)
*optional whipped cream*

Ok lover, once you get your bread cut up into hearts and your french toast batter whisked, heat your skillet to medium high and melt some butter.  Then lightly submerge your challah for a hot sec into the batter.  After you dredge each piece, carefully place on your skillet without getting too much drip-age everywhere.  I created a nice little trail (on accident) so cupid would know where to find me. yep.

Once the hearts become nice and beautiful on each side, take them off your skillet and let them cool for a few minutes.  You don’t want to melt the mascarpone too soon. 

Once they are the perfect temperature (i prefer room-temp) gently spread on your mascarpone.  If you’ve never had this fancy schmancy type of cheese, let me melt your heart and tell you about it.  It’s a sweet Italian creamy soft cheese that is kind of like mix of ricotta, whipped cream, and cream cheese. Super yummy.

Now lay on some of those pretty, pretty strawberries.  I was so excited when I was at Whole Foods today because they had just gotten a shipment in from Florida (my home state!). It was like a special little Valentines Day gift that they gave me without even knowing – besides the fact that they were like 6 bucks for a tiny little carton, but whatevs.

Now for my favorite part – THE NUTELLA.  I just love this stuff sooo much. I’ve heard about people getting getitng in questionable situations with this stuff, and sometimes I fear that in the right time and place and with the right amount of alcohol I could do something a little weird too. But anyways, before i freak you out even more – go ahead and spread on half the nutella onto one heart. COME ON, it’s valentines day.

Now stack it on top, nutella side down and then smear some MORE nutella on the other side.  Gluttony awaits you.

 Now some more berries! awwwWWWWWWwwww!

This seems like there’s a lot of steps, but it goes pretty quickly and your lover will love you even more. promise.  Now for the almost last step, smear on some more mascarpone!

Then place the last heart, mascarpone side down, on top of your beautiful pile of sweetness.  ooooo la la.

And now if you want to make this treat extra special. (insert yummy/nonsexual sounding verb here) some whipped on top and dust with some cinnamon!  ALL DONE.

So if you do decide to make this for that special someone – don’t forget that mimosas and playing hooky pair perfectly with this little treat.

And if you’re alone on Valentines Day,  just follow my lead and chug a bottle of vodka turn up some Twin Sister, and binge eat until your emotions go away just like that giant box of chocolates that came in the mail from your mother secret admirer.

Oh and in case someone appreciates this sandwich a little extra, my favorite flowers are stargazer lilies and my favorite chocolates are vosges. thanks. love you, too.
